Most of the people do not like brinjal...but it has many nutrients..if having the skin problem then don’t eat brinjal...otherwise it is very tasty and nutritious fully vegetable..Brinjal is in three colours..white, green and purple colours..Now I would share the recipe of brinjal kichadi...

Ingredients
Brinjal. - 4 nos
Dry red chilli. - 8 nos
Tamrind - one gooseberry size
Asafoetida. - 1 small piece
Oil - 50 ml
Mustard seeds- 1 teaspoon
Urad dal. - 1 teaspoon
Salt. - required
Method
1. Soak tamrind into a water.
2. Switch on the stove.. Heat a pan and add oil and then add brinjal(cut the center part of the brinjal into four slices)..and fry it well...
3. Then again add oil and add dry red chilli and fry it well..
4. Then grind fried brinjal and dry red chillies fine paste..
5. Heat a pan and oil, mustard seeds, urad dal and after pop mustard seeds add tamrind water(1 time dissolved well)..
6. Boil and add grind paste into a pan..
7. Add salt and asafoetida...
8. Boil it well and switch off the stove..
Brinjal kichadi is ready 😋to serve with idly, dosa..
